Georgia's answer to the "ice wines" of Central Europe A naturally sweet white wine made from dried/frozen Chinebuli grapes. The vineyards are located in the Kartli region, in the Mejvriskhevi microzone. The grapes were harvested in late December after frosts down to -6°C. It offers a transparent sweetness without the heaviness of caramel, with notes of peach, mango, acacia honey, and candied quince. Pleasant accompanying acidity, pronounced light tannins, and a pleasantly long finish. Winter harvesting concentrates the sugars and aromas, while the high natural acidity of the Chinebuli variety maintains a balanced sweetness, resulting in a very gourmet dessert wine. Best chilled to 8-10°C and paired with sharp cheeses, Asian sweet and spicy sauces, and pâtés.
